Cutting the carcass:

Rabbit carcasses are usually classified as "fryers or young rabbits" and as "roasters or mature rabbits." A fryer is usually a domestic rabbit weighing 1 1/2 to 3 1/2 pounds (<12 weeks of age). Its flesh is fine grained, a bright pearly pink color and tender.

Roasters usually weigh 4 pounds and are from animals at least 8 months old. The flesh of a roaster is more firm and coarse grained than that of a fryer. Roaster carcasses may contain a cream colored fat, have a slightly darker colored flesh, and be less tender than that of a fryer.

The following cutting diagram and description yields portions for individual servings

A. Remove Rear Legs and Tail
Cut parallel to and on each side of tail forward until knife contacts leg bones.
Cut perpendicular to spine in front of hip joint on each leg.
Remove by twisting to separate joint.
Cut through spine to remove tail and tail head.

B. Remove Back and Flanks
Cut through spine and along ribs.
Remove flanks by separating thinner flank from thicker muscles of back.

C. Remove Front Legs through the natural seam between the foreleg and ribs

D. Split the Rib with a cleaver or large knife by cutting through and parallel to the spine.

Most recipes call for the rabbit to be cut into 9 or 11 pieces.Well done

There are two points to remember when cooking Rabbit:

First, like all game meat, Rabbit is best cooked in a liquid. Yes, you can certainly grill Rabbit if you first brush it well with cooking oil and you can Barbecue Rabbit the same way. If oven-roasting, coat the meat with oil and then wrap in foil. However, Rabbit will be really at its most tender if you cover it, or keep spooning it, with liquid - stock, sauces, marinades etc - while it is cooking. "Slow Cookers" are an ideal way of producing a really tasty, tender meal.

Second, if you want to cook it in a microwave, we suggest you carefully follow the method used in the "Rabbit in Tomato Sauce recipe", detailed in our Simple Recipes section. Many types of meat are difficult to cook satisfactorily in a microwave and for success with Rabbit please follow the guidelines shown!

About rabbit meat


Rabbit Meat has a distinctive but mild flavour, quite unlike the taste of wild rabbit which many people find too strong. Because of its mild flavour, it is easy to produce a meal which can be as mildly flavoured (Rabbit with Mushrooms and Tomatoes, for example) or as strongly flavoured (Rabbit in a Mustard Sauce) as you wish.

Nutritional Information:

Rabbit Meat is good for you! 100 g (about 3.5 oz) raw rabbit contains 135 KCal and 20 g of Protein. The legs and loins are very low fat - typically 2 - 3%. The shoulders have some fat on them which gives them more flavour (particularly if grilled or barbequed) , but it also increases the fat content to about 7%. However, cholesterol is really low at about 55 mg per 100 g.

New Years Rabbit Pasta

I wanted to try my hand at a nice meaty rabbit one day in this festive month and here is the recipe I used. It is really delicious served on just about any type of pasta although we chose pen'er pasta. This really could be a meal by itself, especially if you added a nice crisp mixed salad and some crusty Italian bread.

1 Pound Rabbit Pieces
3 Tablespoons Olive Oil
1 Carrot, Diced
1 Small Onion, Diced
1 Celery Stalk, Diced
3 Cloves Garlic, Peeled & Minced
1 Chopped Red Chile Pepper
2 Cans Cherry Tomatoes (Or About 3 Cups Fresh Cut In Half)
Salt & Pepper
4 Tablespoons Chopped Fresh Basil
Chopped Parsley
1 Pound Penne Pasta

To Serve:
Grated Pecorino or Parmesan Cheese
Chopped Fresh Parsley

Heat the oil in a heavy saucepan and brown the rabbit pieces on all sides. Remove to a plate. Add the carrot, celery, and onion to the pan and cook for about 5 minutes or until the vegetables are soft and beginning to brown. Add the garlic and cook an additional minute or two. Turn the heat up stirring the mixture to scrape up any browned bits on the bottom of the pan. Add the rabbit back into the pan with the tomatoes, red pepper, and basil. Season with salt and pepper. Cook over low heat for about 2 hours until the meat begins to fall off the bones, adding a little water to the pan if needed. Remove the meat from the bones and return it to the pan. Taste and adjust seasonings if needed.

Cook the penne in boiling salted water until it is "al dente". Drain and return to the pot. Add the sauce to the pasta and stir over medium heat until the sauce is well mixed with the pasta and piping hot. Serve in individual bowls topped with some chopped fresh parsley. Serve, offering grated cheese at the table.

One of the main reasons for opting for a rabbit meat diet is the lower cholesterol and fat content. In fact, according to a study made in the Alabama A & M University, rabbit meat contains far less cholesterol than turkey, chicken, pork or beef. The entire rabbit is composed of white meat, which means rabbit meat is leaner and has lesser fat content. Lesser fat and lesser cholesterol allows the dieter to enjoy eating meat without the high risk of heart problems and high blood pressure.

Some doctors even recommend a special diet that consists of rabbit meat for their patients who have certain heart problems and require a lowered intake of fat, cholesterol and sodium. Rabbit meat even has the east amount of calories when compared to other land dwelling animals. Aside from that, the U.S. Department of Agriculture points out that rabbit is the most nutritious meat a person can eat.

The production of rabbit meat is also one of the most sanitized practices in the meat processing industry. Rabbit farming has gone a long way over the years, and new technology,still on develope and research is still on in our university like University Malaya, University Putra Malaysia and University Sains Malaysia to ensure that the health and quality of the rabbit meat are constantly above acceptable conditions.

With the business of rabbit farming on a rise, and the noted benefits of rabbit consumption, it would not be much is a surprise if rabbit meat becomes a worldwide staple diet.

Must Try - Homemade Grilled Rabbit Recipe

Maybe u can try this simple rabbit recipe in your home, actually i used only 1 rabbit around 1.5kg. Preparation time only take 4 hour and can be served for 4 person.(adult)

• 1 x 1.2kg/2½lb rabbit, preferably wild, jointed
• a handful of fresh thyme and rosemary, leaves picked
• 4 garlic cloves, peeled
• olive oil
• zest and juice of 1 lemon
• 1 teaspoon honey
• salt and freshly ground black pepper

U can easily find all this ingredients in local market like carrefour,tesco or etc...even kedai mamak for the arang.

Put your rabbit pieces into a bowl. Using a pestle and mortar, or a liquidizer, bash or whiz up the thyme and rosemary leaves to a pulp, then add the garlic cloves and bash or whiz again. Stir in 8 tablespoons of olive oil, the lemon zest and juice and the honey, and pour this over the rabbit. Put the meat to one side and let it come to room temperature while you light your barbecue.

Now I’m going to talk about flavour. Get a couple of sprigs of fresh thyme and tie them together like a little brush. Each time you turn the meat, dab it with a little of the marinade to give you a lovely encrusted layer of flavour. This rabbit is going to be really tasty!

Keeping the marinade to one side, remove the pieces of meat and season with salt and pepper. Sandwich the pancetta between the 2 pieces of belly using 3 skewers. Put the legs and shoulder on the barbecue. When they’ve been cooking for 10 minutes, put the belly on. After another 10 minutes put the saddle and ribs on. Make sure you turn the meat over every so often. Look after it by controlling the temperature and basting it continuously with the marinade. Cut three-quarters of the way through each kidney and open them out like a book. Cut the liver into 4 pieces and push one piece on to each remaining skewer, followed by a kidney and more liver.

When all the pieces of meat are beautifully cooked, add your skewered bits of kidney and liver on to the barbecue and cook until golden, along with your 2 remaining slices of pancetta. After a few minutes, when the pancetta is browned, put it on top of the meat at the cooler end of the barbie. Now get your guests round the table.

You can serve the rabbit with any white beans, or roast potatoes, or grilled vegetables, or different salads – it really depends on how you feel and what the weather’s like. Just put a big bowl of your chosen accompaniment in the middle of the table and serve all the meat on a board.

Rabbit Common Sense

Myth #1
Rabbits can live on just carrots, lettuce, and cabbage. A million non-rabbit people I know think this is true.
The Truth: Just like people, rabbits require a balanced diet of vitamins and minerals as well as proteins and fiber. And just like people, they simply cannot survive on a diet limited to just two or three items, especially if one of those items is basically nothing but water (iceberg lettuce). The easiest way to provide for a rabbit's nutritional needs is to find a feed dealer who sells a good quality rabbit pellet. Then you can add the carrots as a treat.

Myth #2
A rabbit can be picked up by its ears. Ouch!

The Truth: A rabbit's ears are not a handle. Try having someone pick you up by your ears if you want to see how it feels! The proper way to pick up a rabbit is to scoop it up, supporting its body with both hands.

Myth #3
Perhaps the worst myth out there is that baby bunnies are weaned and ready to be sold at three to four weeks of age. So many people think that because rabbits are eating solid food at that age that the rabbits are ready to be away from mom.
The Truth: This is probably one of the myths that upsets the reputable breeders the most. A baby rabbit of only three or four weeks still requires its mother's rich milk even though it may be nibbling solid food. Forcibly weaning it this young can cause serious problems later. Weaning at four weeks of age is strictly for the commercial rabbit meat grower and only under controlled conditions!

Myth #4
You can tell everything you need to know about a rabbit from a pedigree.
The Truth: A pedigree is only as good as the person writing it. Anyone who wants can falsify a pedigree to make a rabbit appear better than it is. I say, know who you are dealing with, and if you feel uneasy, go elsewhere to make your purchase.
